HOMEMADE TOMATO JUICE

SCALD CLEAN TOMATOES AND PEEL THEM.

CHOP INTO PIECES

COOK ON LOW UNTIL VERY SOFT.

STRAIN THROUGH STRAINER TO
REMOVE SEEDS. GENTLY PRESS PULP THROUGH
STRAINER AS WELL.

SEASON WITH 1 SCANT TSP. SALT TO 1
QT JUICE.

WILL KEEP IN FRIG ABOUT 1 WEEK.

MAY ALSO CAN JUICE AT THIS POINT, FOLLOW
CANNING INSTRUCTIONS.

RIPENED TOMATOES.
ZUCCHINI PATTIES

3 CUPS GRATED ZUCCHINI, UNPEELED
1 MED. ONION, MINCED
¾  TSP. GARLIC SALT
2 EGGS,  BEATEN
¼ cup flour, heaping
1 CUP GRATED YELLOW CHEESE
Vegetable oil for frying
SALT TO TASTE, about ¼ tsp.

        OPTIONAL FOR ADDED FLAVOR
½ CUP CHOPPED CELERY
½ CUP CHOPPED GREEN PEPPER

MIX ALL INGREDIENTS
 DROP BY ¼ TO 1/3 CUP FULLS IN FRYING PAN WITH HOT VEGETABLE OIL and PAT DOWN TO MAKE THEM FLATTER, FRY UNTIL GOLDEN BROWN ON BOTH SIDES.

IF MIXING AHEAD, LAYER ALL INGREDIENTS AND STIR JUST BEFORE FRYING. IF YOU MIX IT AHEAD OF TIME IT TENDS TO GET QUITE "SOUPY"

These may be frozen after frying, cool and  lay them flat in a zip lock bag. To reheat, use either the microwave or the toaster oven.

These make a nice meat replacement entrée.

I won't give measurements, you fit it to your family size and tastes.

Almost no calories

Saute diced  onion in a small amt. of oil
Add - thinly sliced zucchini (the small ones are best for this)
Add - 1 gt. canned tomatoes
Sprinkle dill weed over the top
Simmer for about 20-25 minutes until vegs are soft
Sprinkle small amt. of flour over the top and stir, while continuing to cook,  to slightly thicken
Salt to taste
(I use a large frying pan and fill it for my family)
